Dinner Diaries: Corn Chowder

Southern Comfort Food!  No matter what part of the country you live in, this is a phrase EVERYONE loves to hear right?  With frigid temperatures attacking the east coast.  Snow shutting down North Carolina two weeks in a row and spring playing hide and go seek, comfort is definitely at the forefront of my mind.  Of course you know I am not a food blogger by any means, but I did decide last week that I would incorporate more things that I love on my blog and cooking is one of them.  Actually to be a bit more up front, I love to entertain, so trying new dishes for the purpose of entertaining is my true love.

Today I made homemade corn chowder and it was scrumptious!  A few years ago I ate some chowder from a restaurant here in the Triangle that had amazing flavor.  I remember the first time I ate it, I thought wow!  It was so good that I had to get a second cup, but not without thinking, boy is this expensive.  At that point I decided that I would just make my own and here we are some 72 months later ready to dig in.

Ingredients:
Fresh Corn (I used frozen)
Potatoes (I used Yukon Gold)
Yellow Onion
Minced Garlic
Salt, Pepper, and Thyme
Heavy Whipping Cream
Butter
Vegetable Stock
